How long microgreens last and how to store them (2026)
The freshness window
- At 4–8 °C, most microgreens keep their quality for 7–14 days.
- Sturdier species last longer: buckwheat, wheatgrass, pea shoots (toward 2 weeks); tender herbs (basil, cilantro) on the shorter end.
- Harvest the day you want to use/sell — storage time is the enemy of quality, especially for sales.
Storage rules that actually work
- Do not wash before storing. Water on the leaves starts browning and mold; rinse right before use.
- High humidity + ventilation: container with a damp paper towel or vented clamshell; lid slightly ajar or with holes — sealed airtight = rot.
- Keep away from fruit (ethylene accelerates wilting) and away from direct light in the fridge.
- No heavy stacking — cut stems bruise and release water that spoils neighbors.
For selling: packaging basics
- Vented clamshells with a harvest-date label — buyers judge freshness by the date, not by looks alone.
- Maintain 4–8 °C from harvest to display; display time matters more than fridge time.
- Harvest slightly earlier for transport (a 1–2 cm stem buffer survives handling; fully tall microgreens bruise).
Spoilage signs (and what to do)
- Slimy stems, sour smell, mold spots → remove affected parts immediately; if the smell is general, discard the batch.
- Natural yellowing of older leaves near the bottom is normal — trim it and use the rest.
